Smoked Pork Carnitas 22 hrs.

This turned into a long and wonderful tasting carnitas smoke.

I saw an add in our local paper for Bone in Pork Picnic Roast 
for $ .99 lb.

Put it in the marinade 11 hrs. 


Put the rub on then yellow mustard 
On the Egg at 8:00 pm. @ 220* indirect with drip pan with
 apple cider vinagar with apple and cherry wood for smoke.


8 am. the next morning turned it fat side down put 
mop and sauce on. 
Pulled at 6 pm. 185* interior for 22 hrs. rest for 1 hr.

Shredded and pulled from the bone.

Carnitas tacos with refried beans. this was truly a wonderful 
and tasteful meal and we have a lot of food left over and 
we will put them to good use.

Grilled Zucchini stuffed with ground Bison meat

My friend and camera operator George Stephenson 
whom still works in the Motion Picture business called 
to say he was in SoCal. So we invited George over 
for dinner and could spend the night since he lives in 
Santa Fe, New Mexico, New Mexico. I had some 
Bison in the freezer so thats going to be filling. 

Here is all the fix-ens. Ground Bison, red onion, 4 cloves garlic, 
1 diced tomato, 1tsp. dried basil, 3/4 C Italian cheese 
blend plus Italian bread crumbs, salt and pepper. 
There is some bacon fat with the olive oil.

Sauted Bison, onion, garlic, tomato, and basil.
Two large Zucchini from our garden cut in half with olive oil, salt,
 and pepper.

Going to take to the kitchen to scoop out the centers and stuff.


With the cheese's on the Grill Grates @ 350*

After 15 minutes. I love the Grill Grate Tool!
Served with Jackie's wonderful Kale salad without strawberries!
 I like it better with. A great meal.

Spicy Peanut Chicken Unkabobs

The fix-ins.
Chicken in the marinade going into the fridge. overnight.
Waiting for the BGE to get to  350*
Grill Grates with Canola Oil with chicken on top.



Pulled @ 20 minutes and then a rest.


Jackie said that she wanted to have this again soon.
Served with mashed potatoes with crispy fried shallots and 
Zucchini. Another keeper recipe!

Christy's Cheese Potatoes

I found this recipe in The Essential Guide to Real Barbecue 
SMOKING MEAT The ultimate how-to guide for smoking 
all kinds of meat and fish By JEFF PHILLIPS. 
The fix-ins less the sour cream that I will add.
All the ingredients in a 9-x9 in. casserole.

Waiting for a few minutes for the BGE to get down to 350*
 and added some Chipotle Rub to the top of the casserole.

In the Egg @350* for 1 hour 30 minutes.
Now doesn't that look and smell wonderful.
Served with broccoli zucchini for vegetables and turkey and 
gravy. this was a fabulous meal, the cheese potatoes 
was just too good.

Grilled and Baked Stuffed Zucchini

Two large zucchini from a zucchini plant in our backyard.
Cut in half.
Then brushed with olive oil.
Cut side down on the grill @350* direct to grill and get some 
grill marks.
I cooked the stuffing on the Egg first in a cast iron pan, 
now it's time to scoop out the center and stuff them.
On the grill still @350* added the cheese mix and Italian bread 
crumbs on top.

Ready to take into the house to rest and serv. These were tasty 
and wonderful the keeper file is getting bigger. Sorry there 
are no plated pictures we were to hungry.
